The Pool Team at Double Deuce


Chana Recipe

2 tbls oil
3 cans chickpeas, wash + drained
1/2 green pepper
5 cloves of garlic
1 green onion
1/2 celery stick
1 1/2 tbls curry powder

Finely chop vegetables (togther in a food processor). Heat oil on med-high. sautee vegetables until soft (2-3mins). Add curry powder and mix together to make a paste. Add chickpeas and heat thru. Stir well to cover chickpeas with the curry paste.
Enjoy and think of Nevis!

Chickpea magic







Later in the day we met back at Kirk's for a swim and a cooking lesson from Radikah. We made the most wonderful Guyanese chickpea dish, friend peanuts, plantains and killer chicken. I will post the chickpea recipe next post.

Sailing on Fiesty






What an amazing day! We (kirk, Carolyn, and Datz's) went out sailing on our friend -- Miles Denne's -- 42' yacht. We cruised to St. Kitts, anchored and snorkeled. We swam with a turtle which was truly an amazing experience. This was Carolyn's first snorkeling experience and she loved it. I also saw more beautiful fish than I have ever seen here. We then wolfed down some lunch at our usual spot - Double Deuce.

Round the Island

I've always wanted to cycle around the island. Well now I can say that I've done it. A 30+ mile ride didn't seem so bad until the backside of the island -- which was one grueling hill after another and the heat was a killer. I had to get off my bike three times! My legs were in such protest. I got heckled by a construction truck loaded with local guys just laughing at me puffing up the hill with my bike at my side - then to add to that, my friend Kirk came running back to help RUN my bike back up the hill. He did all of this with a mountain bike and I was on a road bike. And our friend David (who owns the gym) took the ride as if it was a warm up to the real event. Both of them took such good care of me though. As tired as I felt immediately after the ride, I love having new notch marks for things I've want to do in life post-40!

Another day in Paradise

Leaving for the gym shortly for my personal training sessions (4 times per week). There is an amazing small gym here run by David Walwyn. I now train with Ruth Lynn as David is so busy. She works me really hard -- good thing too as I need to work off the cold Carib beers that go down really easily here! Lily is working on math this morning and poetry. For the first time since we got here, Steve is starting to do some minor work on the house (yes he has truly been relaxing!). Our friend Lion is coming later to help. More later...

Just confirmed that we are sailing and snorkeling with our friend Captain Niles Dennes on Wednesday morning on his lovely sail boat at http://www.nevisyachtcharters.com/contact.html. Sailing buddies are Kirk, his wonderful (and new to us) friend from Warkworth/Toronto, Canada and the three of us. Photos to follow. Miss and love you all back in Skaneateles.

My friend Hetty just emailed me saying - "why don't you set up a blog so we can all hear about our time in Nevis". Well I have done just that all while sitting at Double Deuce in nevis having Sunday lunch. Wifi is just amazing.
